THE KANPAI! TOUR

From May 14th to 30th we’ll be off to Japan for a tour we called:
KANPAI! Italian natural winemakers in pursuit of the Japanese taste.
The aim of this tour is to meet the most important natural farmers, oysters breeders, traditional distilleries, gourmet restaurants, natural wine makers and wines dealer trough all the Japan.
We’ll visit up to nine cities to meet all those special persons that believe in a natural and traditional way to produce high quality foods and drinks.
Our goal is to talk with all of them to better understand their practices and philosophy,  to be inspired by them and share with you this exciting experience trough a documentary film that will be shoot during this intense trip.

Kajita Shoten is a traditional soy sauce and miso warehouse one of the very few in Japan that still carry out all processes in soy sauce making from the purchase of raw materials to the production at its own company.

They sell products that are 100% in-house brewed and they do not add any yeast or enzyme additives, they only brew with nature, naturally.
